Kale with Broccoli Pesto

 Steamed Kale with Broccoli Pest
Celeriac Fries with Chickpeas
 and Basmati Rice

2 cups Broccoli
1/2 cup sunflower seeds
2 cloves garlic
1/2 cup Parmesan Cheese
Avocado oil
Steam Broccoli and garlic until tender soft and bright green.
Put everything into food processor drizzle oil a little time until the desired consistency is achieved. 

Celeriac Fries:
Peel and slice into fries. Place on a cookie sheet with parchment paper. Sprinkle with salt, pepper and paprika.
Drizzle with melted coconut oil and toss. 
Bake at 425 for 40 min. Toss half way through.

Chickpeas and carrots:
Rise and drain a can of organic chickpeas. Spread onto a parchment
lined cookie sheet. Slice 2-4 carrots. Drizzle with melted coconut oil. Sprinkle with salt, pepper and seasonal masala.
Bake at 425 for 20-30 minutes.  Check and stir throughout. Chickpeas should be chewy. Carrots soft.

Serve Pesto over the top of steamed Kale and Basmati Rice. Top with Chickpeas and carrots.
