Rooting for Winter

 Greetings from the frozen tundra that is Upstate New York.  I stepped away from my blog for about a year and now it's time to get back in the groove.  We have just returned from our vacation and our kitchen motivation is feeling stronger than ever.  

While we were away we noticed a number of posts with people describing the struggles that they were dealing with.  Cold, snowy, fridged weather has been beating everyone up. Us included. In order to combat we must find things to get excited about. Put your focus and attention towards the light. (Darkness will increase darkness...Light will increase light!)
Random acts of kindness will always increase the light within you.  Shine on!!

We find that working together in the kitchen is a powerful way to awaken the light and energy within us.  Working as a family creates a bond and super charges our meals. This winter we have enjoyed the bounty of Main Street Market CSA. https://mainstreetfarms.com   We have been enjoying an abundance of winter root veggies and greens.  Today we decided to get creative with our latest batch of goodies.

Today our focus is on Celery/Celeriac Root.These crazy looking tubers can be prepared in many ways.  Roasted, sautéed even eaten raw in a salad.  They are a super  source of antioxidants, fiber, enzymes, Vitamin K, C, Potassium, Folate and B6. They are a delicious change from your typical potato and can be substituted in any potato recipe you might have.
