Coconut Flour Apple Cinnamon Muffins
5 eggs (room temp)
1 cup apple sauce (I used my homemade sauce)
1/2 cup coconut flour (I used Nutivia)
3 Tablespoon cinnamon
1 teaspoon baking soda
1 teaspoon vanilla
1/4 cup melted coconut oil
2 Tablespoon Agave
Preheat oven to 400
Grease muffin tins with coconut oil or line them with cupcake liners.
Mix all ingredients together using a whisk to blend them well.
Let mix sit for a few minutes to meld.
Scoop out 1/3 of a cup of batter for each muffin.
Bake for 12-15 minutes (The tops should be brown and a little soft to the touch)
These make a great breakfast option served with fresh Apple Butter!
