This is a quick toss and is a really loose recipe. Feel free to add or subtract to your liking.
2-3 teaspoon Early Fall Masala
1 zucchini spiralized
8 small tomatoes chopped
1 clove garlic minced
1 clove black garlic minced
1 onion diced
salt & pepper
Heat a spoonful of coconut oil and a spoonful of turmeric ghee. Sauté onion and pepper until soft. Add in garlic and masala stirring until fragrant. Throw in tomatoes. When they have release their juices toss the zucchini until covered with spices.
I like to flash cook the zucchini so that there is a little crunch.
Serve with a tossed salad and rice noodles. Salt & pepper to taste.
Squeeze half a lime over your plate.
