Basic Garam Masala



Garam Masala means hot spices. This is a basic Garam Masala that is wonderful for keeping your Agni (digestive Fire) strong.It is warming and good for your circulation.  Keep your Garam Masala near the stove for any of those recipes that call for a teaspoon of Masala. Feel free to tweak this and if you do share the results.  Every Indian household will have their version that, of course, is the best EVER! I always have a jar of Basic Garam Masala, a Wise Earth Ayrvedic seasonal Masala and Garlic-Ginger paste in my kitchen.  With those three blends I'm ready for just about anything! Jai!

Ingredients~
5 cinnamon stick
1/4 cup black peppercorns
1/4 cup cardamom pods
1/8 cup whole cloves

*Heat oven to 200

* Put cinnamon stick in a towel and smash them lovingly with a rolling pin.
*Put all the ingredients on a parchment lined cookie sheet. 
*Roast for about 20-30 minutes - stir them a couple of times. 
*Take out of oven and allow to cool. Pinch the cardamom pods and remove the seeds. Throw out the pods.  Put all the remaining spices in either a coffee grinder, high speed blender or into your grinding bowl. Grind it as fine as you like.  I usually leave mine with a little bit of texture. Hand grinding is always best -a  better energy exchange.  Having a quality Garam Masala on hand is more important than how it's ground - so if it's to much work to hand grind throw it in the blender! Remember this is kitchen medicine! Keep it on hand and use it.
