Pickled Watermelon Radishes

Quick pickles are an easy way to get a little sour taste on your plate. These will last several days in the fridge. Make sure the radishes stay submerged. 


Pickled Watermelon Radishes
2 Radishes sliced thin with a Mandolin
1/2 cup Sushi Vinegar
1/2 cup sugar
Salt to taste

Root veggie stir fry with sautéed onions - beet & apple salad with Pickled Watermelon Radishes
Mix all the ingredients together and allow to marinate for 30 minutes or longer.  The longer they marinate the softer the radish will become.  Serve at room temperature.  Store leftovers in fridge.
